Wild Fermented Elderflower Soda

I'm finally making the most of the Elderflower tree in my garden by making this Wild Fermented Elderflower Soda!

 

About 7 years ago I bought this little cute seedling called an Elderflower, being a new gardener building my first herb garden I thought I'd just chuck it in between the oregano and Thyme... haha it grew like a bloody weed!

 

In no time we had a massive shrub! 🌳 We cut it back every Spring and it just kept getting bigger every time! The boys used to cry when we pruned because for some reason they just LOVE IT!

 

I look out at it from my office window and I too love it, it's pretty little white flowers and lush green foliage, it reminds me of the Secret Garden and it shields our back deck from the neighbours.

 

Elderflower has lots of uses, medicinal and culinary, as well as looking pretty in vase.

 

Historically Elderflower has been used as an anti-inflammatory, anti-viral, it's rich in bioflavonoids, antioxidants, may help with allergies, regulate blood sugar levels and a can be a mild laxative.

 

You can use it in baking, as a garnish or cake decoration, in tea, syrups and tinctures. One of my favorites ways to use it is to make this Fermented Soda Drink, by the wonderful @milkwood_permaculture providing good bacteria to the gut as well as a refreshing drink.

 

I love to serve mine over ice with a drop of clementine essential oil, slice of cucumber and a sprig of lemon balm or thyme. So refreshing!

 

Note: I only recommend doTERRA essential oils for flavouring as they safe food and therapeutic grade.

Back to the cool things about elderflowers, they can be dried to be used at a later date too. So she's a versatile plant to have in your garden. Having an edible and medicinal garden empowered preparedness! Being able to make your own herbal medicines and remedies is an essential skill to have. It means less reliance on the system!
